Vapa Pitha Recipe
Ingredients:
For the batter:
2 cups rice flour
1/2 teaspoon salt
1/2 cup water (adjust as needed)
For the filling:
1 cup grated coconut
1/2 cup jaggery (finely chopped)
1/4 teaspoon cardamom powder
For steaming:
Banana leaves or cheesecloth (optional, for extra flavor)
Steamer or deep pot
Instructions:
1. Prepare the Batter:
In a large mixing bowl, combine rice flour and salt. Gradually add water, stirring constantly until you get a slightly crumbly but moist texture. It should hold shape when pressed, but crumble when touched.
2. Prepare the Filling:
Mix grated coconut, jaggery, and cardamom powder in a separate bowl. Adjust jaggery for desired sweetness. Set aside.
3. Assemble the Pithas:
Take a small mold (like a small bowl) and sprinkle a thin layer of rice flour batter in it.
Add a spoonful of coconut-jaggery filling in the center.
Cover with another thin layer of rice flour, pressing gently to shape it.
4. Prepare for Steaming:
If using banana leaves, place a small piece at the bottom of each mold for added aroma.
Place the molds in the steamer, ensuring they’re not touching each other.
5. Steam the Pithas:
Steam on medium-high heat for about 10-15 minutes or until the rice flour is cooked through and firm.
6. Serve:
Carefully remove the pithas from the molds. Serve warm, with extra grated coconut on top if desired.
